Pick up one of our sections listed below and we'll have it cut and wrapped to your specifications. Call ahead or stop in during our regular business hours.
Sirloin Strip (Boneless) This section consists of Sirloin
steaks. You find these steaks prepared in fine restaurants.
A Sirloin roast may also be prepared from this section.
Average weight is approx. 10-14 lbs.
Delmonico / Boneless Rib This section consists of Delmonico
(or Rib Eye) steaks - a very tender steak. A Boneless Rib
roast may be prepared from this section. Average weight
is approx. 11-17 lbs.
Top Butt Section consists of Short Cut Rump
and NY Sirloin steaks. May be cut into all steaks or a great
roast for those festive occasions. Average weight is approx.
12-16 lbs.
Top Round This section consists of First Cut
Top and Top Round Steaks. A Top Round roast may also be
prepared from this section along with hamburger. Average
weight is approx. 20-30 lbs.
Bottom Flat This is a great section for roasts.
The section consists of a Back Rump and one or two Bottom
Round roasts. Stew Beef is also an option with this section.
Average weight is approx. 12-14lbs. with very little trimmings.
London Broil This section consists of London Broil
steaks. A Pot roast, Stew Beef and Hamburger may also be
prepared from this section. Average weight is approx. 10-16
lbs.
Chuck (Boneless) This section may be cut into a choice of Chuck steaks, Chuck roasts, Stew Beef and Hamburger. Approx. 1/2 of the section is Hamburger and there is little waste (<10%). Average weight is approx. 50 lbs.
Pork Loin This section may be cut into a
choice of Center Cut Pork Chops, a Bone-In roast, Boneless Pork Roast,
Spare Ribs,and Pork Cutlets. Average weight is approx. 16 - 20 lbs.
